Ms. Endive is a master chef and the main antagonist of the series. Panini is her apprentice.
Personality
Ms. Endive is snobby, arrogant, and pompous. She believes herself to be superior to not only Mung Daal and his company, but to nearly everyone she meets in Marzipan City (except maybe Panini). While she gives the air of someone sophisticated and well-mannered, she eats like a slob (shown in “The Heist”), doesn't wash thoroughly, and eats her own toe jam (shown in “Endive’s Dirty Secret”).
Despite this, she is a perfectionist when it comes to her dishes. She employs proper technique when handling pots, pans, and knives, and even measures out the flames she sets her cookware on.
When she gets angry, she can become ballistic, even if it means damaging her own kitchen.
In terms of her romantic life, she will become overbearing and possessive of any potential suitor, wanting to marry them almost immediately. This has caused her to be dumped and fled from several times. In turn, this has made her both desperate for and resentful of men, shown in “Chowder’s Girlfriend”.
She is also lonely, as shown when she asked Panini to spend quality time with her, Panini rejected the offer when she says that she and Endive "have a professional relationship" and Panini prefers to keep it that way (she also had a date with Chowder). This happened before Endive created a cake-based creature to try to make him her boyfriend.
Relationship
Mung Daal
Mung serves as Endive's rival. She always bests him in everything, and they despise each other. The two chefs are constantly arguing and never get along.
While mostly antagonistic, there have been hints that Endive may enjoy Mung's presence in her life and their rivalry, as she displays sorrow and remorse in the episodes, "At Your Service" and "The Prank" after she believed him to be dead. There were times where the two have gotten along (or at the very least tolerate each-other), as shown in "Sheboodles." She is also implied to have a slight crush on Mung as shown by her monologue during "The Prank."
Chowder
Chowder is antagonized by Endive when Endive antagonizes Mung due to Chowder being Mung's apprentice. Endive also finds Chowder annoying and likes to mock him.
Shnitzel
Shnitzel thinks she is disgusting and hard to look at while Endive has a crush on him, as shown in "Shnitzel Quits", "The Hot Date", and "The Heist", just as Panini has a crush on Chowder. During "Chowder Grows Up", she later marries Shnitzel and they are both happy together.
Panini
Panini is Endive's apprentice. Endive treats her like a teacher would. She even said it herself that she makes her sick and forces Panini to use her claws to break up Chowder, Mung, Gorgonzola, and Stilton's father/son moment in “The Apprentice Games”. Endive hates it when she mentions Chowder and teaches her to strive for perfection. Endive also believes that Panini will be a master chef, as she once let her cook small cookies. She slightly acts like a mother figure to Panini. Panini prefers to have a professional relationship with her, so Panini does not want to spend quality time with her.
Margarine
Margarine is Endive's loyal assistant/janitor.
Appearance
Endive's character stayed constant throughout the initial development. The long nose, which changed from a rectangular shape to a triangle shape for the final version, represents how Endive looks down upon others. She is fat. She is described as being much larger than other characters, and it is a running gag in the series that Mung and his friends mock Endive's size. The universe itself seems to agree with Mung, the very ground shaking under the weight of Endive's footsteps, and Endive is one of the heaviest characters in the show (she once sat on a master and his apprentice in "The Apprentice Game", accidentally destroyed a wooden dock, and made a shockwave so strong in her kitchen that she accidentally broke off a small piece of the kitchen's ceiling in "The Heist"). She has large round buttocks which wobble as she walks, as shown in “At Your Service” and “The Apprentice Games”. Her hair is fairly short, is a sickly shade of green, and flips upward at the ends. Her everyday attire is a long-sleeved red dress with a small floral pattern, and includes a Chinese Dragon.
Her swimwear is normally a leopard-print bikini.

- Endive appears to be a pastry chef, because a lot of the food that she makes include desserts and baked goods.
- She may have fostered feelings for Mung Daal despite her outward behavior.
- In "The Apprentice Games," she points out to Mung that they're alone together, whereupon he backs away and calls for help.
- In "The Prank," she twice nearly confesses her feelings for Mung, but every time is interrupted before she finishes her sentence.
- Despite Endive's hatred on Mung, she does care about him, as shown in “At Your Service” and “The Prank”.
- Whenever Mung is approached by Endive, he says her name in a scornful way.
- Mung and Sergeant Hoagie each called Endive "sir" rarely, though she is a female (Mung insulted her this way in “At Your Service” and Hoagie mistakenly called her “sir” in “The Hot Date”). In "The Apprentice Games," when Stilton was talking to Endive pleasantly, Mung told him that Endive "is no lady", but Stilton disagreed with him. Mung meant to say that Endive is not a normal woman, as she is his rival who made him uncomfortable, so Mung tried to insult her.
- She has had many boyfriends who jumped off of a dead end because of her possessive personality, as shown in “Shnitzel Quits”.
- Her cooking style is far gentler than Mung's, as her dishes are quite normal and not as monstrous as Mung's. However, in one episode, she made a cake-based creature to try to make him her boyfriend.
- So far, she is better than Mung in making Shmingerbread House, and Mung implied to admit it to her when he reluctantly told her that he wanted to buy a Shmingerbread House.
- She doesn't take a no for an answer and subdues the people who say it, as shown in "Shnitzel Quits".
- She is not fond of Reuben or Stilton when they imply to have a crush on her. She looks at them as annoying.
- She drives a motorcycle and wears a motorcycle helmet and black boots when she does this, shown in “The Hot Date”.
- She is kind to Sergeant Hoagie when the chief could not hang out with his date. Endive provided Hoagie a lift on her motorcycle. She used bacon scent as a perfume, which the Hoagie likes due to him being a dog-like man, shown in “The Hot Date”.
- Her size tends to increase usually when she is angry or acting sinister. Usually, she would appear as normal-sized, like a regular person, and is slightly taller than Shnitzel, who is tall, but at those moments, she could be around the size of a Hulk from Marvel, around twice as large as him, or at a size where her toilet’s flushing hole could fit Gazpacho and Chowder. Her increased size allows her to make a splash so large that she can empty her personal pool, shown in “At Your Service”. In "The Apprentice Games", her behind was so large that Chowder and Mung take a ride on it and then they ascend her back using mountaineering gear.
- Endive's body's proportions change slightly in some episodes. Sometimes, her neck is around the size of her torso, but sometimes or when she wears her bathing suit, her neck seems smaller and her torso seems larger.
- In “Shnitzel Quits”, when Mung, Truffles, and Chowder got trapped in Endive's kitchen, Mung frantically said that Endive is going to "sit on them".
- Whenever Endive appears behind Mung and Chowder and surprises them, they scream in fear because of her larger size.
- Two guards in "The Apprentice Games" were afraid of Endive, as one of them once thought that she was going to eat them when they unintentionally blocked her passage.
- Endive likes to eat live frogs, though at least one survived by getting out of her mouth. She also likes to eat cooked crab legs (shown in "The Heist") and turkey legs.
- At rare moments, when her face is zoomed in closely, she has green eyes, as shown in “Shnitzel Quits” and “Endive’s Dirty Secret”. However, sometimes when she gets angry, her eyes turn red, also shown in “Shnitzel Quits”, “The Apprentice Games”, and "The Hot Date".
- She is very strong in a superhuman way, as she once easily threw a man at Mung in one episode. She also used her rear end to push Mung with great force in “At Your Service”, and Truffles in “Shnitzel Quits”. She is strong enough and tough enough to break through walls, as shown in “Shnitzel Quits”. This was also shown in one episode, when Mung switched bodies with Endive, he used her body to break through walls. This was shown in another episode, where when Mr. Fugu's fruit costume party happened, Shnitzel accidentally hit a pot of Shrinky Pinky Spice on Endive's back, but Endive did not feel it. Mung once called Endive's behind a "brick wall of a behind". Endive is also fast, as she charged and used her strength to push many people in the Apprentice Games like a football player, shown in “The Apprentice Games”.
- She normally has normal human-like teeth, but when she gets angry, her teeth sometimes are shown sharp and pointy, which are perhaps a cartoonish action, shown in "Shnitzel Quits", “The Apprentice Games”, and "The Hot Date".
- She might have lifted the Lead Farfel, as seen in "Shnitzel and the Lead Farfel", because if one looks closely, the letters "Endi" (possibly short for "Endive") can be seen on one of the lines.
- She can jump very high, similar to the Hulk, as shown in “At Your Service” and “Endive’s Dirty Secret”.
- Endive's anger is similar to the Hulk's, as they both go on a rampage when they get angry.
- At certain times, when Endive gets angry, her hair shoots up like a bush, shown in “Shnitzel Quits” and “The Apprentice Games”.
- She sometimes either comes in barefoot or wears shoes in her regular outfit when her feet are shown. Her feet had three toes each in her early appearances, but they later usually have four each. Her bare feet are sometimes shown increasing in size. Her shoes are usually red high-heels or sneakers.
- She is wasteful and selfish when it comes to letting people use her stuff. For instance, on one extremely hot day, though she only dipped her toe into her pool and immediately came back out, she still wouldn't let Mung swim at all. This is shown in “Endive’s Dirty Secret”.
- Many fans think Mung is Endive's ex-fiancé, because in "Chowder's Girlfriend," it's revealed that Endive was engaged to get married at one point, but her fiancé never showed up for their wedding, thus breaking her heart and causing her trademark intense misandry. However, C.H. Greenblatt confirmed at Wondercon 2008 that Mung's NOT the jerk who ditched Endive on their wedding day.[citation needed]
- The episodes "The Heist" and "The Prank" have inspired a confusing question: "whom does Endive love? Shnitzel or Mung?"
- In “Shnitzel Quits”, she is good at sword-fighting, as shown when she fought Mung to try to get Shnitzel back.
- In “Shnitzel Quits”, she can smell at great distances when she was tracking Shnitzel when he was trying to hide from her.
- In “Shnitzel Quits”, when Endive was cornering Shnitzel and then unintentionally made him jump off a balcony from her building, her skin turned yellow when excited.
- It is possible that Mung is older than Endive, considering that on some occasions she calls him "old man." This may be true because while Mung has white hair, Endive's hair still hasn't lost its color.
- In the episode "Panini for President," it's shown that she enjoys being covered in mud, like a pig.
- She likes to eat her toe-jam with a fork, which is collectively frowned upon, as was revealed in "Endive's Dirty Secret".
- Ironically, the citizens of Marzipan City are more concerned with the utensil used than the actual behavior.
- She's named "Endive" after a type of lettuce that has pointed leaves and a very bitter flavor when eaten raw--Greenblatt felt that this was fitting for the character's personality and appearance.
- In Japanese, Endive and Gorgonzola are both voiced by Hikari Yono. Hikari Yono was also the voice of Pud'n' and Irwin on The Grim Adventures of Billy & Mandy, a fellow Cartoon Network program.[citation needed]
- Her voice actress, Mindy Sterling is noted for her portrayal of Ms. Francine Briggs on iCarly.
- Ironically, they both have similar personalities, and are both antagonists for both shows.
